Description

Crockpot Pineapple BBQ Chicken is a sweet and tangy dish where tender chicken is cooked low and slow in a flavorful mixture of pineapple and BBQ sauce. It’s the perfect weeknight meal that’s easy to make and packed with flavor.

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned), with juice
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)
  • Rice or buns for serving (optional)

Instructions

  1. Place the chicken breasts in the bottom of the Crockpot (slow cooker).
  2. In a medium bowl, mix together the pineapple chunks (with juice), BBQ sauce, soy sauce, honey, garlic powder, onion powder, and ground ginger. Stir until well combined.
  3. Pour the pineapple BBQ sauce mixture over the chicken breasts, making sure they are evenly coated.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 4-6 hours, or until the chicken is cooked through and easily shreds with a fork.
  6. Once the chicken is cooked, shred it with two forks right in the Crockpot, mixing it with the sauce to coat the chicken.
  7. Serve the shredded Pineapple BBQ Chicken over rice or in sandwich buns for a delicious meal. Garnish with chopped green onions if desired.

Notes

  • If you prefer a thicker sauce, you can transfer the sauce to a small saucepan after cooking and simmer it over medium heat for a few minutes to reduce and thicken.
  • This dish can be served with rice, mashed potatoes, or as a filling for sandwiches or wraps.
  • You can also add sliced bell peppers or onions to the Crockpot for additional flavor and texture.
