- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned), with juice
- 1 cup BBQ sauce (your favorite brand or homemade)
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
- Rice or buns for serving (optional)
Instructions
- Place the chicken breasts in the bottom of the Crockpot (slow cooker).
- In a medium bowl, mix together the pineapple chunks (with juice), BBQ sauce, soy sauce, honey, garlic powder, onion powder, and ground ginger. Stir until well combined.
- Pour the pineapple BBQ sauce mixture over the chicken breasts, making sure they are evenly coated.
- Season with salt and pepper to taste.
- Cover and cook on low for 4-6 hours, or until the chicken is cooked through and easily shreds with a fork.
- Once the chicken is cooked, shred it with two forks right in the Crockpot, mixing it with the sauce to coat the chicken.
- Serve the shredded Pineapple BBQ Chicken over rice or in sandwich buns for a delicious meal. Garnish with chopped green onions if desired.
Notes
- If you prefer a thicker sauce, you can transfer the sauce to a small saucepan after cooking and simmer it over medium heat for a few minutes to reduce and thicken.

- You can also add sliced bell peppers or onions to the Crockpot for additional flavor and texture.
