- 2 lbs chicken breasts (boneless, skinless)
- 1 packet ranch seasoning mix
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup chicken broth
- 1 tbsp olive oil (optional)
- 1/2 tsp garlic powder (optional)
- Salt and pepper, to taste
- Taco shells or tortillas, for serving
- Toppings of choice (cheese, lettuce, tomatoes, salsa, sour cream, etc.)
Instructions
- Place the chicken breasts in the crockpot.
- Sprinkle the ranch seasoning over the chicken.
- Add the diced tomatoes (with juices), chicken broth, and optional olive oil and garlic powder.
- Cover and cook on low for 6-8 hours, or until the chicken is cooked through and easily shreds.
- Remove the chicken from the crockpot, shred it using two forks, and return it to the crockpot. Stir to coat the chicken with the sauce.
- Serve the ranch chicken in taco shells or tortillas with your favorite toppings.
Notes
- You can also add corn or black beans to the crockpot for added flavor and texture.
- If you prefer spicier tacos, use a can of diced tomatoes with jalapeños or add some hot sauce to the mix.
- Leftovers can be stored in the fridge for 3-4 days and are perfect for meal prepping.
