These Crockpot Ranch Chicken Tacos are the ultimate easy weeknight dinner! With just a few ingredients, including ranch seasoning and chicken, this slow-cooked meal is packed with flavor and perfect for taco night. Serve with your favorite toppings for a simple, yet delicious meal.


Ingredients

  • 2 lbs chicken breasts (boneless, skinless)
  • 1 packet ranch seasoning mix
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 tbsp olive oil (optional)
  • 1/2 tsp garlic powder (optional)
  • Salt and pepper, to taste
  • Taco shells or tortillas, for serving
  • Toppings of choice (cheese, lettuce, tomatoes, salsa, sour cream, etc.)

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the ranch seasoning over the chicken.
  3. Add the diced tomatoes (with juices), chicken broth, and optional olive oil and garlic powder.
  4. Cover and cook on low for 6-8 hours, or until the chicken is cooked through and easily shreds.
  5. Remove the chicken from the crockpot, shred it using two forks, and return it to the crockpot. Stir to coat the chicken with the sauce.
  6. Serve the ranch chicken in taco shells or tortillas with your favorite toppings.

Notes

  • You can also add corn or black beans to the crockpot for added flavor and texture.
  • If you prefer spicier tacos, use a can of diced tomatoes with jalapeños or add some hot sauce to the mix.
