Description

This indulgent Croissant Breakfast Casserole with Lemon Curd and Berries is the perfect way to elevate your brunch. Flaky croissants soaked in a sweet and creamy custard, layered with fresh berries and tangy lemon curd – it’s a deliciously luxurious breakfast dish!

Ingredients

Scale
  • 4 large croissants, cut into chunks
  • 1/2 cup lemon curd
  • 2 cups mixed fresh berries (blueberries, raspberries, strawberries, etc.)
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • Powdered sugar (for dusting, optional)

Instructions

  1. Prepare the Croissants:
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray. Tear the croissants into chunks and arrange them evenly in the prepared dish.
  2. Prepare the Custard Mixture:
In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt. Pour the custard mixture over the croissant chunks, making sure all pieces are soaked. Let the mixture sit for about 10 minutes to allow the croissants to absorb the custard.
  3. Layer with Lemon Curd and Berries:
Spoon dollops of lemon curd over the croissant mixture and gently swirl it into the custard. Sprinkle the fresh berries evenly over the top.
  4. Bake:
Bake in the preheated oven for 30-40 minutes, or until the casserole is golden brown and the custard is set.
  5. Serve:
Allow the casserole to cool for 5-10 minutes before serving. Dust with powdered sugar, if desired, and enjoy!

Notes

  • Make-Ahead: You can prepare the casserole the night before. After assembling, cover it and refrigerate overnight. In the morning, just pop it in the oven and bake as directed.
  • Berry Options: Feel free to use any combination of berries that you prefer, such as blackberries, strawberries, or raspberries.
  • Lemon Curd: If you don’t have homemade lemon curd, store-bought works well too!
