- 2/3 cup brown sugar
- 2 tablespoons granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 1/4 cups all-purpose flour
- 2 teaspoons cornstarch
- 1/2 cup black cocoa powder
- 3 tablespoons crushed Oreos (about 2 Oreos)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup semi-sweet chocolate chips
For the Strawberry Cheesecake Frosting:
- 4 oz cream cheese, softened
- 4 tablespoons butter, softened
- 3/4 cup powdered sugar
- 1/4 cup chunky strawberry jam (divided)
- 1 teaspoon vanilla extract
- 1/4 teaspoon strawberry flavoring (optional)
Instructions
Step 1: Prepare the Chocolate Cookie Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, cornstarch, black cocoa powder, crushed Oreos, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the semi-sweet chocolate chips.
Step 2: Bake the Cookies
- Scoop 2-tablespoon portions of dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Slightly flatten the dough balls with your palm or the back of a spoon.
- Bake for 10-12 minutes, or until the cookies are set but still soft in the center.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Step 3: Make the Frosting
- In a medium bowl, beat together the cream cheese and butter until smooth and creamy.
- Add the powdered sugar, vanilla extract, and strawberry flavoring (if using). Mix until smooth.
- Gently fold in half of the strawberry jam, leaving streaks for texture.
Step 4: Assemble the Cookies
- Once the cookies have completely cooled, pipe or spread a generous layer of the cheesecake frosting onto each cookie.
- Top each cookie with a small dollop of the remaining strawberry jam for a burst of fruity flavor.
Notes
- If you don’t have black cocoa powder, you can substitute with regular unsweetened cocoa powder for a milder chocolate flavor.
- Feel free to use any type of chocolate chips you prefer, such as milk chocolate or dark chocolate.
- For an extra strawberry kick, you can use homemade strawberry jam or add a little bit of strawberry extract to the frosting.
- To make smaller cookies, reduce the portion size of the dough balls to 1 tablespoon and adjust the baking time accordingly.
- These cookies freeze well! Store them in an airtight container in the freezer for up to 3 months.
