  • ¾ tsp baking soda
  • ⅛ tsp salt
  • ¾ cup milk chocolate chips
  • 8 large marshmallows (cut in half lengthwise)

  • 1 graham cracker
  • 2 tsp unsalted butter (melted)
  • 2 tbsp milk chocolate chips
  • 1 tbsp unsalted butter (melted)

Instructions

  1. Brown the Butter:
    • Melt butter in a saucepan over medium-low heat. Stir frequently and watch as it turns golden brown with a nutty aroma.
    • Once browned, remove from heat and let cool for 10 minutes.
  2. Prepare the Dough:
    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Crush graham crackers into fine crumbs using a zip-top bag and rolling pin.
    • Add both sugars to the cooled browned butter and stir until fully combined.
    • Mix in the egg and vanilla extract until smooth.
    • Add flour, graham cracker crumbs, baking soda, and salt. Mix until a dough forms.
    • Fold in the milk chocolate chips.
  3. Shape and Bake:
    • Use a 1/3-cup cookie scoop (or divide dough into 8 equal portions) to form dough balls.
    • Place dough balls on the prepared baking sheet and bake for 10 minutes, until set but not fully golden on the edges.
    • Immediately press two marshmallow halves onto each cookie, slightly overlapping.
  4. Toast the Marshmallows:
    • Turn on the oven’s broiler to high.
    • Broil cookies for 1-2 minutes until marshmallows are golden brown. Watch closely to avoid burning.
  5. Add Toppings (Optional):
    • For chocolate drizzle: Melt 1 tbsp butter, then stir in 2 tbsp milk chocolate chips until smooth.
    • For graham cracker crumble: Mix ground graham cracker crumbs with 2 tsp melted butter.
    • Drizzle chocolate over cookies and sprinkle with graham cracker crumbles.
