For the Graham Cracker Cookies:

- ⅓ cup granulated sugar (2.3 ounces)
- 1 large egg (room temperature)

- 1⅓ cups all-purpose flour (6.65 ounces)
- 4 full sheets graham crackers (about 66g), finely crushed
- ¾ tsp baking soda
- ⅛ tsp salt
- ¾ cup milk chocolate chips
- 8 large marshmallows (cut in half lengthwise)
Optional Toppings:
- 1 graham cracker
- 2 tsp unsalted butter (melted)
- 2 tbsp milk chocolate chips
- 1 tbsp unsalted butter (melted)
Instructions
- Brown the Butter:
- Melt butter in a saucepan over medium-low heat. Stir frequently and watch as it turns golden brown with a nutty aroma.
- Once browned, remove from heat and let cool for 10 minutes.
- Prepare the Dough:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Crush graham crackers into fine crumbs using a zip-top bag and rolling pin.
- Add both sugars to the cooled browned butter and stir until fully combined.
- Mix in the egg and vanilla extract until smooth.
- Add flour, graham cracker crumbs, baking soda, and salt. Mix until a dough forms.
- Fold in the milk chocolate chips.
- Shape and Bake:
- Use a 1/3-cup cookie scoop (or divide dough into 8 equal portions) to form dough balls.
- Place dough balls on the prepared baking sheet and bake for 10 minutes, until set but not fully golden on the edges.
- Immediately press two marshmallow halves onto each cookie, slightly overlapping.
- Toast the Marshmallows:
- Turn on the oven’s broiler to high.
- Broil cookies for 1-2 minutes until marshmallows are golden brown. Watch closely to avoid burning.
- Add Toppings (Optional):
- For chocolate drizzle: Melt 1 tbsp butter, then stir in 2 tbsp milk chocolate chips until smooth.
- For graham cracker crumble: Mix ground graham cracker crumbs with 2 tsp melted butter.
- Drizzle chocolate over cookies and sprinkle with graham cracker crumbles.
