Ingredients

  • 2 cups shredded purple cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 4 green onions, sliced
  • 1/2 cup cilantro leaves, chopped
  • 1/3 cup sliced almonds, toasted
  • 1 cup crispy wonton strips
  • 2 tablespoons sesame seeds
  • For the dressing:
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Instructions

  1. In a large bowl, combine the Napa cabbage, purple cabbage, carrots, bell pepper, green onions, and cilantro.
  2. Add the cooked chicken, toasted almonds, sesame seeds, and crispy wonton strips to the bowl.
  3. In a small bowl or jar, whisk together all the dressing ingredients until smooth and well combined.
  4. Pour the dressing over the salad and toss everything together until evenly coated.
