- 4 cups mixed salad greens
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1/2 cup sliced cucumber
- 1/4 cup chopped fresh cilantro
- 1/4 cup roasted peanuts, chopped
- For the spicy dressing:
- 3 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey
- 1 tsp sriracha or hot sauce (adjust to taste)
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, lime juice, honey, sriracha, garlic, salt, and pepper to make the spicy dressing.
- In a large salad bowl, combine mixed greens, shredded chicken, carrots, bell pepper, cucumber, and cilantro.
