Ingredients
Scale
- 2 cucumbers
- 12 cherry tomatoes, halved
- 4 oz cream cheese, softened
- 1 tablespoon mayonnaise
- 3 tablespoons light ranch dressing
- 1 tablespoon fresh or frozen dill
- 1/4 teaspoon garlic salt
- Black pepper, for garnish
Instructions
- Prepare the Cucumbers: Rinse, peel, and slice the cucumbers into half-inch thick rounds. Scoop out a small portion from the center of each cucumber slice to create a well.
- Make the Creamy Filling: In a bowl, combine softened cream cheese, mayonnaise, and ranch dressing. Mix until smooth. Add dill and garlic salt, stirring just until combined.
- Assemble the Bites: Place the filling in a piping bag with a star attachment and pipe about 3/4 tablespoon of the mixture into each cucumber well. If the filling doesn’t adhere well, pat the cucumber slices dry with a paper towel before piping.
- Top with Tomatoes and Garnish: Place half a cherry tomato on top of each filled cucumber. Sprinkle with black pepper.
- Serve and Enjoy: Serve immediately or refrigerate for up to a few hours before serving.
Notes
Feel free to customize the filling by adding herbs or spices to suit your taste.
