  • 2 tbsp mayonnaise

  • 1 tsp lemon juice
  • 1 tsp fresh dill (or 1/2 tsp dried dill)
  • Salt and pepper to taste
  • Paprika (optional, for garnish)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Cucumber:
    • Wash the cucumber thoroughly and slice it into 1/4-inch thick rounds. Arrange the slices on a serving platter.
  2. Make the Dressing:
    • In a small bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, and fresh dill. Stir until smooth and well combined. Season with salt and pepper to taste.
  3. Assemble the Bites:
    • Place a small spoonful of the creamy dressing on top of each cucumber slice. Spread it out slightly to cover most of the surface.
  4. Add the Shrimp:
    • Gently place a shrimp on top of each cucumber slice. You can either leave the shrimp whole or cut them into halves or thirds if you prefer smaller portions.
  5. Garnish and Serve:
    • Sprinkle the bites with a pinch of paprika and fresh parsley for an extra pop of flavor and color (optional).
    • Serve immediately or refrigerate for up to 30 minutes before serving.

Notes

  • You can use pre-cooked shrimp or cook your own shrimp by boiling them for about 2-3 minutes until pink and opaque. Allow them to cool before assembling.
