- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cold and cut into cubes
- 6–8 tablespoons cold water
For the Filling:
- 1 ½ cups fruit filling (strawberry, raspberry, cherry, or apple)
- 1 tablespoon lemon juice (optional, to balance sweetness)
For the Egg Wash:
- 1 egg, beaten with 1 tablespoon water
For Dusting:
- Powdered sugar (optional)
Instructions
- Make the Pie Crust:
In a food processor, pulse together the flour, sugar, and salt. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
Gradually add cold water, 1 tablespoon at a time, until the dough just begins to come together. Avoid overmixing.
Turn the dough out onto a floured surface, shape it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes. - Prepare the Filling:
While the dough chills, prepare the fruit filling of your choice. If using fresh fruit, chop it into small pieces and mix with lemon juice. If using pre-made fruit filling (like strawberry or raspberry), simply stir it to combine. - Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. - Roll Out the Dough:
On a floured surface, roll the chilled dough out to about ¼-inch thickness. Use a heart-shaped cookie cutter to cut out two heart shapes per pie. - Assemble the Pies:
Place a spoonful of fruit filling in the center of one heart-shaped dough piece, leaving a small border around the edges. Top with a second heart-shaped dough piece, gently pressing the edges together to seal the pie. You can use a fork to crimp the edges for a decorative look and ensure they’re sealed tightly. - Brush with Egg Wash:
Brush the tops of the pies with the beaten egg wash for a golden, shiny finish. - Bake the Pies:
Place the hand pies on the prepared baking sheet and bake for 18-22 minutes, or until the crust is golden brown and the filling is bubbling. - Cool and Serve:
Let the pies cool on a wire rack for a few minutes before serving. For an extra sweet touch, dust with powdered sugar before serving.
Notes
- Feel free to use store-bought pie crust if you’re short on time or prefer an easier method.
