Ingredients
- 1/4 cup extra virgin olive oil
- 1 1/2 pounds chicken breasts or thighs, sliced
- 2 tablespoons yellow curry powder

- 2 teaspoons chipotle chile powder
- 2 teaspoons garlic powder
- Salt and black pepper, to taste
- 3 small sweet potatoes, sliced
- 4 pieces naan, warm
- 1–2 cups tzatziki sauce
- 2 cups shredded lettuce
- 1 cup mixed herbs (dill, basil, parsley, cilantro, etc.)
- 1/2 cup sliced pepperoncini (or any pickled vegetable)
- 1 shallot, thinly sliced
- 1/2 cup oil-packed sun-dried tomatoes, plus 1/4 cup oil from jar
- 1/2 cup tahini
- 1 clove garlic, grated
- 1/4 cup lemon juice
- 1 tablespoon toasted sesame oil
- 2 tablespoons toasted sesame seeds
Instructions
- In a large bowl, combine olive oil, curry powder, smoked paprika, chipotle chile powder, garlic powder, salt, and pepper. Add the chicken slices and toss to coat. Heat a skillet over medium-high heat and cook the chicken for 6–8 minutes, or until golden and cooked through. Set aside.
- Preheat the oven to 400°F (200°C). Arrange the sliced sweet potatoes on a baking sheet and drizzle with olive oil. Roast for 20–25 minutes, flipping halfway through, until tender and golden.
- In a large bowl, combine shredded lettuce, mixed herbs, sliced pepperoncini, and shallot. Add the sun-dried tomatoes and drizzle with the oil from the jar. Toss to combine.
- In a small bowl, whisk together tahini, grated garlic, lemon juice, toasted sesame oil, and toasted sesame seeds. Adjust the consistency by adding water if needed, until smooth.
- Warm the naan and spread a generous amount of tzatziki sauce on each piece. Layer the curry chicken, roasted sweet potatoes, and salad on top. Drizzle with the toasted lemon tahini and serve immediately.
