Instructions

  • Prepare the Waffle Batter:
    • In a medium bowl, whisk together the flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
    • In a separate bowl, whisk the egg yolks with buttermilk, oil, and vanilla extract.
    • Gradually add the dry ingredients into the wet mixture in 2-3 additions, stirring lightly to combine. Avoid overmixing.
    • Fold in the finely chopped semi-sweet chocolate.
  • Whip the Egg Whites:
    • In a clean bowl, use a hand mixer to beat the egg whites until soft peaks form.
    • Gently fold the whipped egg whites into the waffle batter, being careful not to deflate them.
  • Cook the Waffles:
    • Heat and grease your waffle iron according to the manufacturer’s instructions.
    • Add the batter to the waffle iron and cook until the waffles are done. Cooking time may vary depending on the waffle maker.
  • Add the Peeps:
    • Top the hot waffles with marshmallow Peeps right before serving. For layered waffles, let them cool completely before adding Peeps to prevent melting.
  • Serve:
    • Serve the waffles immediately for a spooky, marshmallowy treat. If needed, reheat waffles in a 200°F oven for a few minutes to soften the marshmallows.
