- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 3/4 cup raspberry jam (seedless preferred)
- 1 1/2 cups dark chocolate chips or chopped dark chocolate
- 2 tablespoons heavy cream
- Optional: fresh raspberries and powdered sugar for garnish
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the salt and flour, and mix until a crumbly dough forms.
- Press the dough evenly into the bottom of the prepared baking pan. Prick with a fork to prevent bubbling.
- Bake the crust for 18–20 minutes, or until lightly golden.
- Remove from the oven and allow to cool for 5–10 minutes. Then, spread the raspberry jam evenly over the crust while it’s still warm.
- In a microwave-safe bowl or over a double boiler, melt the dark chocolate with the heavy cream until smooth and glossy. Stir well.
- Pour the melted chocolate over the raspberry layer, spreading evenly with a spatula.
- Refrigerate for at least 2 hours, or until the chocolate is set.
- Use the parchment overhang to lift the bars from the pan. Slice into squares or rectangles and garnish with fresh raspberries or powdered sugar, if desired.
Notes
- Seedless raspberry jam creates a smooth layer, but seeded jam works if you prefer a more rustic texture.
- For a twist, add chopped nuts or a splash of raspberry liqueur to the chocolate layer.
- Store bars in the refrigerator for up to 5 days or freeze for longer storage.
