Description

Dark Chocolate Raspberry Bars are rich, indulgent dessert bars featuring a buttery shortbread crust, a sweet raspberry layer, and a luscious dark chocolate topping. These elegant yet easy-to-make bars are perfect for holidays, parties, or anytime you want to treat yourself.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 3/4 cup raspberry jam (seedless preferred)
  • 1 1/2 cups dark chocolate chips or chopped dark chocolate
  • 2 tablespoons heavy cream
  • Optional: fresh raspberries and powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the salt and flour, and mix until a crumbly dough forms.
  3. Press the dough evenly into the bottom of the prepared baking pan. Prick with a fork to prevent bubbling.
  4. Bake the crust for 18–20 minutes, or until lightly golden.
  5. Remove from the oven and allow to cool for 5–10 minutes. Then, spread the raspberry jam evenly over the crust while it’s still warm.
  6. In a microwave-safe bowl or over a double boiler, melt the dark chocolate with the heavy cream until smooth and glossy. Stir well.
  7. Pour the melted chocolate over the raspberry layer, spreading evenly with a spatula.
  8. Refrigerate for at least 2 hours, or until the chocolate is set.
  9. Use the parchment overhang to lift the bars from the pan. Slice into squares or rectangles and garnish with fresh raspberries or powdered sugar, if desired.

Notes

  • Seedless raspberry jam creates a smooth layer, but seeded jam works if you prefer a more rustic texture.
  • For a twist, add chopped nuts or a splash of raspberry liqueur to the chocolate layer.
