- 1 ½ cups pitted dates, chopped
- 1 cup water
- 1 teaspoon baking soda
- ½ cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 ½ cups all-purpose flour

- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup milk
- 1 tablespoon vanilla extract
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- Prepare the Dates: In a saucepan, combine chopped dates and water. Bring to a simmer and cook for 5 minutes until dates soften. Stir in baking soda and set aside to cool.
- Make the Cake Batter: In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In a separate bowl, combine flour, baking powder, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until smooth.
- Add the Dates: Fold the cooked date mixture into the batter and stir until evenly combined. Pour the batter into the prepared cake pan.
- Bake: Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool completely before adding the custard topping.
- Prepare the Custard: In a saucepan, heat milk over medium heat until warm. In a bowl, whisk together eggs, sugar, and vanilla extract until smooth. Gradually add the warm milk to the egg mixture, whisking constantly. Pour the mixture back into the saucepan and cook over low heat, stirring constantly until it thickens. Pour the custard over the cooled cake.
- Serve: Allow the custard to set before slicing and serving.
Notes
- You can use a different dried fruit, like raisins or figs, in place of the dates if desired.
