Description

Indulge in these Decadent Oreo Cheesecake Cookie Bars that combine the best of both worlds: a chewy cookie base, rich cheesecake layer, and crunchy Oreo bits! These bars are the ultimate treat for Oreo lovers, delivering a perfect balance of creamy, sweet, and chocolatey goodness.

Ingredients

Scale

For the Cookie Base:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed Oreos (about 1012 cookies)

For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup crushed Oreos (about 56 cookies)

Instructions

  1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

  2. Make the Cookie Base
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, beating until fully combined. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the crushed Oreos.

  3. Prepare the Cheesecake Layer
In a medium bowl, beat the softened cream cheese and sugar until smooth. Add the egg, vanilla extract, and sour cream, and continue beating until well combined. Gently fold in the crushed Oreos.

  4. Layer the Bars
Press the cookie dough evenly into the prepared baking pan to form the base layer. Pour the cheesecake mixture on top and spread it evenly over the cookie dough. Use a spatula or knife to swirl the two layers together lightly.

  5. Bake the Bars
Bake for 30-35 minutes, or until the cheesecake layer is set and the edges of the cookie bars are golden. A toothpick inserted into the center should come out with a few moist crumbs.

  6. Cool and Slice
Let the bars cool completely in the pan on a wire rack. Once cooled, slice them into squares and serve. For an extra indulgent touch, top with more crushed Oreos or whipped cream.

Notes

  • Chill for Best Results: For cleaner slices, refrigerate the bars for 1-2 hours before cutting.
  • Add Extra Toppings: Feel free to add extra crushed Oreos on top before baking for more Oreo crunch.
  • Serving Suggestion: These bars are delicious served chilled, or at room temperature for a softer texture.
