- 2 tbsp Sugar
- 1/2 tsp Vanilla Extract
- 1/2 cup Strawberries, diced
- 4 Tortillas (6 inch)
- 2 tbsp Butter, softened
- 1 tsp Sugar (for topping)
- 1/2 tsp Cinnamon (for topping)
- Strawberry sauce for dipping
Instructions
- In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Beat together until smooth.
- Dice the strawberries and gently fold them into the cream cheese mixture until combined.
- Spread half of the strawberry cream cheese mixture on one tortilla.
- Heat 1 teaspoon of butter in a pan over medium-high heat. Once melted, place the tortilla in the pan, cream cheese side up.
- Spread an additional teaspoon of butter on the second tortilla and place it on top of the cream cheese, butter side up.
- Cook both sides for 2-3 minutes each, or until crispy.
- Mix together the cinnamon and sugar, then sprinkle on top of the finished quesadilla.
- Repeat the process for the second quesadilla or use a griddle to cook them simultaneously.
- Remove from heat and let sit for 2 minutes, then slice and serve with strawberry sauce.
