Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch deep dish pizza pan or a similar-sized baking dish.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy, about 2–3 minutes. Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the chocolate chips.
- Spread the cookie dough mixture evenly into the prepared pizza pan, pressing it down into a crust. Bake for 20–25 minutes, or until golden brown around the edges. Remove from the oven and let it cool completely.
- While the cookie crust cools, prepare the cheesecake filling. In a mixing bowl, beat the cream cheese until smooth. Add the powdered sugar, heavy cream, and vanilla extract. Beat until the mixture is creamy and smooth.
- Spread the cheesecake filling evenly over the cooled cookie dough crust.
- Top the cheesecake with mini chocolate chips and cookie dough chunks.
- Refrigerate the dessert for at least 2 hours to allow the cheesecake to set before serving. Slice and enjoy!
