  • 1/4 cup cookie dough chunks (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch deep dish pizza pan or a similar-sized baking dish.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy, about 2–3 minutes. Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the chocolate chips.
  5. Spread the cookie dough mixture evenly into the prepared pizza pan, pressing it down into a crust. Bake for 20–25 minutes, or until golden brown around the edges. Remove from the oven and let it cool completely.
  6. While the cookie crust cools, prepare the cheesecake filling. In a mixing bowl, beat the cream cheese until smooth. Add the powdered sugar, heavy cream, and vanilla extract. Beat until the mixture is creamy and smooth.
  7. Spread the cheesecake filling evenly over the cooled cookie dough crust.
  8. Top the cheesecake with mini chocolate chips and cookie dough chunks.
  9. Refrigerate the dessert for at least 2 hours to allow the cheesecake to set before serving. Slice and enjoy!
