Instructions
- Prepare the Batter: In a bowl, mix the pancake mix with water and vanilla extract until you achieve a thick, smooth batter that coats the marshmallows well.
- Heat the Oil: In a deep fryer or heavy-bottomed pot, heat oil to about 350°F (175°C), ensuring enough oil to fully submerge the marshmallows.
- Coat the Marshmallows: Dip each marshmallow into the batter, ensuring it’s fully covered.
- Fry the Marshmallows: Carefully place the battered marshmallows into the hot oil, frying for about 20-30 seconds until golden brown and crispy.
- Drain and Dust: Remove with a slotted spoon and place on paper towels to drain. Dust with powdered sugar or cinnamon sugar while warm.
- Serve Warm: Enjoy immediately while they are warm and gooey
