Description

Ingredients

  • 1 1/2 cups fresh peaches, peeled and diced

Instructions

  1. In a large mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon.

  2. In a separate bowl, whisk together eggs, milk, and vanilla extract.

  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be thick.

  4. Gently fold in the diced peaches and melted butter.

  5. Heat vegetable oil in a deep frying pan or pot to 350°F (175°C).

  6. Carefully drop spoonfuls of the batter into the hot oil, frying in batches. Fry for about 3-4 minutes per side, or until golden brown and crispy.
