Ingredients
-
2 cups all-purpose flour
-
2 tablespoons sugar
-
1 tablespoon baking powder
-
1/2 teaspoon salt
-
1 teaspoon cinnamon
-
2 large eggs
-
1/2 cup milk
-
1 teaspoon vanilla extract
-
1 1/2 cups fresh peaches, peeled and diced
-
1/4 cup unsalted butter, melted
-
Vegetable oil (for frying)
-
1/4 cup cinnamon sugar (for coating)
Instructions
-
In a large mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon.
-
In a separate bowl, whisk together eggs, milk, and vanilla extract.
-
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be thick.
-
Gently fold in the diced peaches and melted butter.
-
Heat vegetable oil in a deep frying pan or pot to 350°F (175°C).
-
Carefully drop spoonfuls of the batter into the hot oil, frying in batches. Fry for about 3-4 minutes per side, or until golden brown and crispy.
-
Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
-
While still warm, toss the fritters in cinnamon sugar to coat.
-
Serve and enjoy!
Notes
-
Make sure the oil is at the right temperature (350°F) to ensure the fritters fry up golden and crispy.
-
You can also serve these with a drizzle of honey or a dusting of powdered sugar for extra sweetness.
-
For a different twist, try adding a bit of nutmeg to the batter.
