Instructions

  • Prepare the Crust: Preheat your oven to 350°F (175°C). Line a mini muffin tin or regular muffin tin with liners, or lightly grease with cooking spray. In a small bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until combined. Spoon about 1 tablespoon into each muffin cup and press down firmly to form the crust. Set aside.
  • Prepare the Cream Cheese Filling: In a medium bowl, beat the cream cheese and sugar until smooth. Add the egg, vanilla extract, and lemon juice, mixing until fully combined.
  • Assemble the Bites: Spoon the cream cheese mixture over the crust in the muffin cups, filling each about 3/4 full. Add a small dollop of raspberry jam on top and swirl gently with a toothpick. Optionally, place a fresh raspberry in the center.
