Ingredients
Scale
For the flatbread:
- 2 cups all-purpose flour (or whole wheat flour for a healthier option)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup warm water
- 2 tablespoons olive oil (plus extra for brushing)
- 1 teaspoon dried oregano (optional, for added flavor)
For the topping:
- 1 cup feta cheese, crumbled
- 1/2 cup peas (fresh or frozen)
- 4–5 radishes, thinly sliced
- 1/4 cup fresh herbs (parsley, mint, and dill work wonderfully)
- 2 tablespoons olive oil (for drizzling)
- Salt and pepper, to taste
- Lemon zest (optional, for garnish)
Instructions
- Prepare the Flatbread Dough:
- In a large bowl, combine the flour, baking powder, and salt.
- Add the warm water and olive oil. Mix together until a dough forms. Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic.
- Divide the dough into 4 equal portions (or more for smaller flatbreads). Roll each portion into a ball and let them rest under a damp cloth for 15-20 minutes.
- Roll Out the Flatbreads:
- After the dough has rested, roll each portion into a thin circle or oval (about 6-8 inches in diameter) using a rolling pin. You can make them larger or smaller depending on your preference.
- Cook the Flatbreads:
- Heat a cast-iron skillet or non-stick frying pan over medium-high heat. Brush each flatbread lightly with olive oil.
- Cook the flatbreads one at a time in the hot pan. Cook for about 1-2 minutes on each side, or until they puff up slightly and are golden brown with some dark spots. Remove from the pan and keep warm.
- Prepare the Toppings:
- In a small bowl, toss the peas with a little olive oil, salt, and pepper. If using frozen peas, you can either thaw them or quickly warm them up in the microwave.
- Thinly slice the radishes and chop the fresh herbs.
- Crumble the feta cheese into small pieces.
- Assemble the Flatbreads:
- Once the flatbreads are cooked, place them on a serving platter.
- Spread crumbled feta evenly over each flatbread.
- Top with a handful of peas, radish slices, and fresh herbs.
- Drizzle with a little olive oil and season with salt and pepper to taste.
- Optional Garnish:
- For extra freshness, grate some lemon zest over the top before serving. You can also drizzle with a little extra olive oil or serve with a side of tzatziki or yogurt for dipping.
- Serve:
- Serve these spring flatbreads immediately while they are still warm, and enjoy as a light lunch, appetizer, or side dish.
Notes
- If you prefer a gluten-free version, you can substitute the flour with a gluten-free flour blend.
- Feel free to add other spring vegetables like asparagus, roasted carrots, or sautéed spinach.
- These flatbreads can be made ahead and stored in an airtight container. Reheat them on a hot skillet for a few seconds before serving.
