Description

Deliciously spiced gingerbread waffles served with a sweet and tangy orange syrup, perfect for a cozy breakfast or brunch.

Ingredients

Scale

For the Waffles:

  • 2 cups all-purpose flour
  • ¼ cup brown sugar
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1¾ cups buttermilk
  • ½ cup molasses
  • ¼ cup melted butter
  • 2 large eggs

For the Orange Syrup:

  • 1 cup orange juice
  • ½ cup granulated sugar
  • 1 tbsp cornstarch

Instructions

  • Preheat Waffle Iron: Preheat your waffle iron according to its manufacturer’s instructions.
  • Mix Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, ground ginger, cinnamon, nutmeg, baking powder, baking soda, and salt.
  • Combine Wet Ingredients: In another bowl, mix the buttermilk, molasses, melted butter, and eggs until well combined.
  • Make the Batter: Slowly pour the wet mixture into the dry ingredients. Stir until just combined, but don’t overmix.
  • Cook the Waffles: Pour the batter onto the preheated waffle iron and cook until golden brown. Repeat with the remaining batter.
  • Prepare the Orange Syrup: In a small saucepan, combine orange juice and sugar. Heat over medium heat until the sugar dissolves. In a separate cup, mix cornstarch with a bit of cold water to create a slurry, then stir it into the orange juice mixture. Bring to a simmer and cook until the syrup thickens.
  • Serve: Serve your gingerbread waffles warm with a drizzle of the homemade orange syrup.

Notes

  • For extra flavor, consider adding a pinch of ground cloves or allspice.
  • These waffles freeze well; reheat in a toaster or oven for a quick breakfast.
