Description

These Dill Bread with Egg Salad and Apple Bites are a flavorful, refreshing twist on traditional tea sandwiches. Creamy, herby egg salad is paired with crisp apple slices atop fragrant homemade dill bread. A perfect bite-sized appetizer or snack with a balance of creamy, tart, and herby notes.

Ingredients

Scale
  • For the Dill Bread:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon dried dill or 2 tablespoons fresh dill, chopped
  • 1 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • For the Egg Salad:
  • 6 large eggs, hard boiled and peeled
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill, chopped (or 1 tsp dried dill)
  • Salt and pepper to taste
  • For Assembly:
  • 1 crisp apple (like Honeycrisp or Granny Smith), thinly sliced
  • Lemon juice (to keep apples from browning)
  • Fresh dill sprigs (for garnish, optional)

Instructions

  1. Make the Dill Bread: Preheat oven to 350°F (175°C). In a large bowl, whisk together flour, baking powder, salt, and dill. In a separate bowl, beat the egg with milk and oil. Combine wet and dry ingredients until just mixed. Pour into a greased loaf pan and bake for 35–40 minutes or until golden and a toothpick comes out clean. Let cool completely, then slice thinly.
  2. Prepare the Egg Salad: Chop hard-boiled eggs and place in a bowl. Add mayo, Dijon mustard, chopped dill, salt, and pepper. Mix until creamy and well combined. Chill until ready to use.
  3. Prepare the Apples: Slice the apple thinly and drizzle with a little lemon juice to prevent browning.
  4. Assemble: Cut dill bread slices into small squares or rounds (bite-sized). Top each piece with a spoonful of egg salad and a slice of apple. Garnish with dill if desired.
  5. Serve: Arrange bites on a platter and serve immediately or cover and chill for up to 1 hour before serving.

Notes

  • You can use store-bought bread with dill or herbs if you’re short on time.
  • Substitute Greek yogurt for part of the mayo for a lighter egg salad.
  • These bites are best assembled just before serving for optimal texture.
