- 4 cups cooked, shredded chicken (about 1 rotisserie chicken or 2 lbs boneless chicken breasts, cooked)
- 1 (6 oz) box chicken-flavored stuffing mix (e.g., Stove Top)
- 1 ½ cups chicken broth
- ½ cup unsalted butter, melted
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of celery soup
- ½ cup sour cream
- 1 cup frozen mixed vegetables (peas, carrots, corn), thawed
- ½ tsp black pepper
- ½ tsp garlic powder
- ¼ cup fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat & Prep: Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Prepare the Stuffing: In a medium bowl, combine the stuffing mix, melted butter, and chicken broth. Stir until the stuffing is moistened, then set aside to soak for 5 minutes.
- Mix the Base: In a large bowl, whisk together the cream of chicken soup, cream of celery soup, and sour cream until smooth. Fold in the shredded chicken, thawed vegetables, black pepper, and garlic powder.
- Assemble the Casserole: Spread the chicken mixture evenly in the bottom of the prepared baking dish. Fluff the stuffing with a fork and spread it evenly over the top of the chicken mixture.
- Bake: Bake uncovered for 30-35 minutes, until the stuffing is golden brown and the casserole is bubbly around the edges.
- Serve: Let cool for 5-10 minutes. Sprinkle with chopped parsley (if using) and serve warm. Enjoy!
