For the Casserole:

  • 4 cups cooked chicken, shredded or diced (about 2 medium chicken breasts)

  • 12 oz egg noodles, cooked and drained

  • 1 cup frozen peas (optional)

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

For the Creamy Sauce:

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • ½ cup milk

  • 2 teaspoons garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried parsley

  • Salt and pepper to taste

For the Topping:

  • 1 cup crushed Ritz crackers or breadcrumbs

  • 2 tablespoons melted butter


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Make the Creamy Sauce:

    • In a large bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, parsley, salt, and pepper until smooth and well combined.

  3. Assemble the Casserole:

    • Add the cooked chicken, cooked egg noodles, frozen peas (if using), and 1 cup of shredded cheddar cheese to the creamy sauce. Stir everything together until evenly combined.

    • Pour the mixture into the prepared baking dish and spread evenly.

  4. Prepare the Topping:

    • In a small bowl, combine the crushed Ritz crackers (or breadcrumbs) with the melted butter. Sprinkle the mixture evenly over the casserole.

  5. Bake the Casserole:

    • Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
