Description

  • 1 packet taco seasoning mix
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (divided)
  • 1 1/2 cups crushed Doritos
  • 1/2 cup onion, finely chopped (optional)
  • 1 cup shredded lettuce (optional, for topping)
  • 1/2 cup diced tomatoes (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray.

  2. Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spatula as it cooks. Drain any excess fat.

  3. Add the Seasoning and Tomatoes: Stir in the taco seasoning and diced tomatoes with green chilies. Simmer for about 5 minutes, allowing the flavors to combine. Remove from heat.

  4. Layer the Casserole: In the prepared baking dish, spread a layer of crushed Doritos on the bottom. Top with half of the beef mixture, then sprinkle with half of the shredded cheddar cheese.

  5. Add the Sour Cream: Spread sour cream over the beef and cheese layer. Add the remaining beef mixture and top with the remaining shredded cheddar cheese.

  6. Bake: Bake the casserole in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
