Ingredients
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chilies (Rotel)
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese (divided)
- 1 1/2 cups crushed Doritos
- 1/2 cup onion, finely chopped (optional)
- 1 cup shredded lettuce (optional, for topping)
- 1/2 cup diced tomatoes (optional, for topping)
Instructions
-
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray.
-
Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spatula as it cooks. Drain any excess fat.
-
Add the Seasoning and Tomatoes: Stir in the taco seasoning and diced tomatoes with green chilies. Simmer for about 5 minutes, allowing the flavors to combine. Remove from heat.
-
Layer the Casserole: In the prepared baking dish, spread a layer of crushed Doritos on the bottom. Top with half of the beef mixture, then sprinkle with half of the shredded cheddar cheese.
-
Add the Sour Cream: Spread sour cream over the beef and cheese layer. Add the remaining beef mixture and top with the remaining shredded cheddar cheese.
-
Bake: Bake the casserole in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
-
Garnish and Serve: If desired, top the casserole with shredded lettuce and diced tomatoes before serving. Serve hot and enjoy!
Notes
- You can swap the ground beef for ground turkey or chicken for a lighter version.
- For extra flavor, you can add a few jalapeños or hot sauce to the beef mixture.
- Serve with salsa, guacamole, or sour cream on the side for extra dipping.
- If you prefer less crunch in the Doritos, you can crush them slightly more before layering.
