Description

Dulce de Leche Cinnamon Sandwich Cookies are a delicious blend of warm cinnamon-spiced cookies with a rich, sweet dulce de leche filling. These cookies are perfect for any dessert table or just as an indulgent snack with coffee or tea.

Ingredients

Scale
  • For the Cookies:
    • 1 3/4 cups all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1/2 cup brown sugar, packed
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/4 cup granulated sugar (for rolling)
  • For the Dulce de Leche Filling:
    • 1/2 cup dulce de leche (store-bought or homemade)
    • 2 tablespoons unsalted butter, softened
    • 1/4 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. In a separate large bowl, beat together the softened butter and brown sugar until light and fluffy. Add the egg and vanilla extract, and beat until smooth.
  2. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated. The dough should be soft but not sticky.
  3. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.
  4. Preheat the Oven: While the dough chills, preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  5. Shape the Cookies: Roll the dough into 1-inch balls and then roll each ball in the granulated sugar. Place them on the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the back of a spoon.
  6. Bake: Bake the cookies for 8-10 minutes, or until they’re lightly golden around the edges. Let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  7. Make the Filling: In a small bowl, beat together the dulce de leche, softened butter, and vanilla extract until smooth and creamy.
  8. Assemble the Sandwich Cookies: Once the cookies are completely cool, spread a generous amount of the dulce de leche filling on the flat side of one cookie. Top it with another cookie to form a sandwich. Repeat with the remaining cookies.
  9. Serve and Enjoy: Let the sandwiches set for a few minutes before serving. Enjoy your Dulce de Leche Cinnamon Sandwich Cookies!

Notes

  • For a slightly different flavor, you can add a pinch of nutmeg or ground ginger to the cinnamon cookie dough for a more complex spice profile.
  • If you can’t find dulce de leche, you can make your own by simmering sweetened condensed milk until it thickens and turns caramelized.
  • These cookies can be stored in an airtight container at room temperature for up to 5 days.
