Description

These colorful Easter Jello Cookies are a fun, festive treat that’s perfect for the holiday season! With a soft, chewy texture and a burst of fruity flavor from the Jello, they’re a delightful addition to any Easter celebration. Fun to make with the kids and sure to be a hit with everyone!


Ingredients

  • 1 box (3 oz) flavored Jello (your choice of color, such as strawberry, lemon, lime, or orange)
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

 

  • 1/4 cup powdered sugar (for rolling cookies)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg to the butter mixture and beat until well combined.
  5. Stir in the Jello powder until the mixture is fully combined and the dough is lightly colored and fragrant.
  6. Gradually add the dry ingredients (flour mixture) into the wet ingredients, stirring until a soft dough forms.
  7. Pour the powdered sugar into a small bowl. Scoop tablespoon-sized balls of dough and roll them in the powdered sugar to coat.
  8. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 8-10 minutes, or until the edges of the cookies are just lightly golden. The centers may look a little soft, but they will firm up as they cool.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Feel free to experiment with different Jello flavors to create a variety of colorful cookies.
  • These cookies are best stored in an airtight container to maintain their softness.
  • You can also add sprinkles or small candy pieces on top before baking to make them even more festive!
