- 1 1/2 cups granulated sugar
- 1 large egg
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup powdered sugar (for rolling cookies)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a separate large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg to the butter mixture and beat until well combined.
- Stir in the Jello powder until the mixture is fully combined and the dough is lightly colored and fragrant.
- Gradually add the dry ingredients (flour mixture) into the wet ingredients, stirring until a soft dough forms.
- Pour the powdered sugar into a small bowl. Scoop tablespoon-sized balls of dough and roll them in the powdered sugar to coat.
- Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges of the cookies are just lightly golden. The centers may look a little soft, but they will firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
