Ingredients
Scale
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1/2 cup rainbow sprinkles (plus extra for topping)
For the Topping:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- Extra rainbow sprinkles (for garnish)
Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan or line it with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.
- Press the mixture into the bottom of the prepared pan, forming an even layer. Bake for 8-10 minutes, or until the crust is lightly golden and set. Remove from the oven and allow it to cool while you prepare the cheesecake filling.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, sour cream, and heavy cream until the mixture is smooth.
- Gently fold in the rainbow sprinkles, being careful not to mix too vigorously so the sprinkles don’t dissolve into the batter.
- Bake the Cheesecake:
- Pour the cheesecake filling over the cooled graham cracker crust, smoothing the top with a spatula.
- Bake at 325°F (163°C) for 55-60 minutes, or until the edges are set and the center is slightly jiggly. The cheesecake should not be fully firm in the center, as it will continue to set while cooling.
- Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. After that, transfer it to the fridge to chill for at least 4 hours, or overnight for the best results.
- Make the Whipped Cream Topping:
- In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cheesecake has cooled and chilled, spread the whipped cream over the top of the cheesecake.
- Garnish and Serve:
- Top the cheesecake with extra rainbow sprinkles for a festive, fun look.
- Slice and enjoy the creamy, fun-filled birthday cake cheesecake!
