Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan or line it with parchment paper.
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.
    • Press the mixture into the bottom of the prepared pan, forming an even layer. Bake for 8-10 minutes, or until the crust is lightly golden and set. Remove from the oven and allow it to cool while you prepare the cheesecake filling.
  • Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy, about 3-5 minutes.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the vanilla extract, sour cream, and heavy cream until the mixture is smooth.
    • Gently fold in the rainbow sprinkles, being careful not to mix too vigorously so the sprinkles don’t dissolve into the batter.
  • Bake the Cheesecake:
    • Pour the cheesecake filling over the cooled graham cracker crust, smoothing the top with a spatula.
    • Bake at 325°F (163°C) for 55-60 minutes, or until the edges are set and the center is slightly jiggly. The cheesecake should not be fully firm in the center, as it will continue to set while cooling.
    • Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. After that, transfer it to the fridge to chill for at least 4 hours, or overnight for the best results.
  • Make the Whipped Cream Topping:
    • In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
