Instructions

  1. Prepare the Cream Filling:
    • In a large mixing bowl, beat the heavy cream with a hand mixer or stand mixer until soft peaks form.
    • In a separate bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
    • Gently fold the whipped cream into the mascarpone mixture until combined and fluffy. If using, stir in the cooled coffee or espresso for extra flavor.
  2. Prepare the Biscoff Layers:
    • In a shallow dish, combine the brewed coffee (or milk) with the coffee liqueur or rum, if using.
    • Quickly dip each Biscoff cookie into the coffee mixture, making sure not to soak them for too long. Place the dipped cookies in a single layer at the bottom of a 9×9-inch (or similar-sized) dish.
  3. Assemble the Tiramisu:
    • Spread half of the mascarpone cream mixture over the layer of Biscoff cookies, smoothing it out evenly.
    • Add another layer of dipped Biscoff cookies on top of the cream.
    • Finish by spreading the remaining mascarpone cream on top of the cookies.
  4. Chill the Tiramisu:
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
  5. Garnish and Serve:
