  • For the Nachos:
    • 1 pound ground beef
    • 1/2 onion, diced
    • 1 tablespoon minced garlic
    • 1.5 cups shredded sharp cheddar cheese
    • 1.5 cups shredded mozzarella cheese
    • Tortilla chips
    • Pickled jalapeños (for garnish)
    • Cilantro (for garnish)
  • Seasonings:
    • 1.5 tablespoons cumin
    • 1 tablespoon oregano
    • 1/2 tablespoon paprika
    • 1/2 tablespoon chili powder
    • 1 tablespoon onion powder
    • 1 tablespoon garlic powder
    • 2 tablespoons light soy sauce
    • 1 teaspoon sugar

Instructions

  • Shred cheese: Shred cheese and set aside.
  • Cook beef: In a pan over medium heat, add oil, onions, and garlic. Sauté for 30 seconds, then add ground beef. Break up any clumps and cook until halfway cooked. Add seasonings except for light soy sauce and sugar. Stir until combined. Once ground beef is cooked, add light soy sauce and sugar.
  • Optional: Drain grease: Push ground beef to one side of the pan and tilt to collect grease. Discard or soak up with a paper towel.
  • Melt cheese: Turn heat to medium-low, add cheese, and cover for a few minutes until melted.
  • Assemble nachos: Place tortilla chips on a serving plate. Top with cheesy ground beef, pickled jalapeños, and cilantro.

Notes

  • For added heat, consider using spicy cheese or more jalapeños.
  • You can customize the toppings with diced tomatoes, sour cream, or guacamole.
