  • 1/2 cup breadcrumbs
  • 2 tbsp fresh sage, chopped
  • 1/4 cup cranberry sauce (or dried cranberries)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil (for frying)
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)
  • Salt and pepper, to taste

Instructions

  1. Prepare the filling:
    In a large mixing bowl, combine the chicken sausage (or ground chicken), breadcrumbs, chopped sage, cranberry sauce, onion, garlic, and Dijon mustard. Season with salt and pepper to taste. Mix everything together until well combined.
  2. Preheat the oven:
    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Prepare the puff pastry:
    Roll out the puff pastry on a lightly floured surface. Cut the pastry into long rectangles (about 2 inches wide).
  4. Fill the pastry:
    Spoon the sausage and chicken mixture along the center of each pastry rectangle. Roll up the pastry tightly around the filling, sealing the edges with a little water.
  5. Brush with egg wash:
    Place the rolled sausage rolls on the prepared baking sheet. Brush the tops with the beaten egg to give them a golden finish when baked.
