Description

This Easy Crockpot Chicken and Potatoes is the ultimate one-pot meal that requires minimal effort and delivers big flavor. With tender chicken, seasoned potatoes, and vegetables all cooked together in the slow cooker, this dish is perfect for busy nights when you want a comforting, hearty dinner without the hassle.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs)
  • 45 medium-sized potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Prepare the Crockpot: Spray the inside of your slow cooker with non-stick spray or lightly grease it.
  2. Layer Ingredients: Place the diced potatoes, chopped onion, and minced garlic at the bottom of the crockpot.
  3. Season the Chicken: Season the chicken breasts with salt, pepper, thyme, rosemary, and paprika. Place the chicken on top of the vegetables.
  4. Add Liquid: Pour the chicken broth over the chicken and vegetables. Drizzle olive oil over the top of the chicken.
  5. Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and the potatoes are tender.
  6. Optional Topping: In the last 10 minutes of cooking, sprinkle the shredded cheddar cheese over the chicken and allow it to melt.
  7. Serve: Once the chicken is cooked and tender, serve hot with the vegetables. Garnish with fresh herbs, if desired.

Notes

  • You can substitute chicken breasts with thighs for a more juicy and flavorful option.
  • If you prefer crispy skin, you can brown the chicken in a skillet before adding it to the crockpot.
  • Feel free to add other vegetables like carrots or bell peppers for extra flavor and nutrition.
  • For extra richness, top with a dollop of sour cream or a drizzle of ranch dressing.
