- 4 large eggs
- ½ cup unsalted butter, melted
- 1 tablespoon lemon zest

- Powdered sugar, for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan or pie dish with cooking spray or butter.
- In a medium bowl, whisk together the sugar, eggs, and lemon juice until smooth.
- Add the melted butter, lemon zest, vanilla extract, and salt. Mix until fully incorporated.
- Pour the lemon mixture into the prepared tart pan and smooth the top with a spatula.
- Bake for 25–30 minutes or until the tart is set and lightly golden around the edges. The center may still jiggle slightly, but it will firm up as it cools.
- Let the tart cool to room temperature, then refrigerate for at least 2 hours or until completely chilled and firm.
- Once chilled, dust with powdered sugar if desired and serve. Slice and enjoy the citrusy goodness!
