- 1 tablespoon olive oil

- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 medium potato, diced
- 1 (14.5 oz) can diced tomatoes
- 2 cups fish stock (or vegetable broth)
- 1/2 cup dry white wine (optional)
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, bell pepper, and potato. Cook for 5-7 minutes, until the vegetables begin to soften.
- Add the garlic and cook for another 30 seconds until fragrant.
- Pour in the diced tomatoes, fish stock, and white wine (if using). Stir in the smoked paprika, thyme, salt, and pepper. Bring to a simmer and cook for about 10 minutes, or until the potatoes are tender.
- Gently add the fish chunks into the stew, making sure they are submerged in the liquid. Simmer for another 5-7 minutes until the fish is cooked through and flakes easily with a fork.
- Remove the stew from heat and adjust seasoning with additional salt and pepper if needed.
- Serve the stew hot, garnished with freshly chopped parsley.
Notes
- For added flavor, you can toss in some chopped carrots or celery when cooking the onions and peppers.
