Description

Easy Fish Stew Delight is a comforting and flavorful dish that combines tender fish with a rich, aromatic broth made with tomatoes, herbs, and vegetables. Perfect for a weeknight dinner or a cozy meal on a cold day, this stew is quick, healthy, and absolutely satisfying.

Ingredients

Scale
  • 1 lb white fish fillets (such as cod, haddock, or tilapia), cut into chunks
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 medium potato, diced
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups fish stock (or vegetable broth)
  • 1/2 cup dry white wine (optional)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, bell pepper, and potato. Cook for 5-7 minutes, until the vegetables begin to soften.
  2. Add the garlic and cook for another 30 seconds until fragrant.
  3. Pour in the diced tomatoes, fish stock, and white wine (if using). Stir in the smoked paprika, thyme, salt, and pepper. Bring to a simmer and cook for about 10 minutes, or until the potatoes are tender.
  4. Gently add the fish chunks into the stew, making sure they are submerged in the liquid. Simmer for another 5-7 minutes until the fish is cooked through and flakes easily with a fork.
  5. Remove the stew from heat and adjust seasoning with additional salt and pepper if needed.
  6. Serve the stew hot, garnished with freshly chopped parsley.

Notes

  • For added flavor, you can toss in some chopped carrots or celery when cooking the onions and peppers.
  • If you prefer a thicker stew, you can mash some of the potatoes in the stew before adding the fish.
  • For a little spice, add a pinch of red pepper flakes or a dash of hot sauce.
