- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/2 cups freshly milled whole wheat flour (hard white or soft white wheat)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups chocolate chips or chunks (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, beating well after each. Stir in the vanilla extract.
- In a separate bowl, whisk together the freshly milled flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips if using.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 9-11 minutes, or until the edges are golden and the centers are set but soft. Do not overbake.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Freshly milled flour absorbs more moisture than store-bought flour—if dough feels dry, add 1–2 tablespoons of milk.
- Use hard white wheat for a lighter texture or soft white wheat for a more tender cookie.
- These cookies freeze well. Store cooled cookies in an airtight container for up to 3 months.
