Description

These Easy Fried Potatoes with Green Onions are a delicious and quick side dish. Crispy on the outside and fluffy on the inside, they are perfect for breakfast, lunch, or dinner.


Ingredients

  • 1 pound (450g) potatoes (about 34 medium potatoes)
  • 3 tablespoons oil
  • 1/2 cup (52g) sliced green onions (45 green onions)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)

Instructions

  • Prepare and Cook Potatoes:
    • Prick each potato a few times with a fork. Microwave on High for 6-8 minutes until soft and easily pierced with a knife. Larger potatoes may need more time. Move to a cutting board and cut into 1-inch cubes.
  • Pan Fry Potatoes:
    • Heat oil in a large skillet over medium-high heat. Arrange the potato cubes in a single layer in the pan and cook undisturbed for 4 minutes. Season with half of the salt and pepper. Turn the potatoes and cook for an additional 4-5 minutes, stirring occasionally, until they are golden and crispy. Adjust seasoning with the remaining salt and pepper as desired.
  • Finish with Onions:
    • Stir in the chopped green onions and cook for 1 minute. Taste and adjust the seasoning if needed. Serve hot.
