Description

Delicious and flaky gluten-free spanakopita parcels filled with spinach, feta cheese, and herbs. A perfect appetizer or light meal that’s both savory and satisfying.


Ingredients

  • 250 g fresh spinach, washed and chopped
  • 150 g feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 sheets gluten-free phyllo pastry (store-bought or homemade)
  • 3 tablespoons melted butter or olive oil (for brushing)

Instructions

  1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Sauté the onion until translucent, then add the garlic and cook for another minute.
  3. Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  4. In a bowl, combine the cooked spinach mixture, crumbled feta, dill, parsley, oregano, salt, and pepper.
  5. Place one sheet of gluten-free phyllo on a clean surface and brush lightly with melted butter or olive oil. Layer with a second sheet and brush again.
  6. Cut the layered sheets into 4 equal squares. Spoon the spinach filling onto each square.
  7. Fold each square into a parcel, sealing the edges by pressing gently.
  8. Place the parcels on the baking sheet and brush the tops with more melted butter or olive oil.
  9. Bake for 20-25 minutes, or until golden brown and crispy.
  10. Allow to cool slightly before serving.

Notes

  • If gluten-free phyllo sheets are unavailable, you can use gluten-free puff pastry as an alternative.
  • For a vegan option, substitute feta with vegan cheese and use olive oil instead of butter.
  • These parcels can be made ahead and frozen before baking. Bake from frozen, adding a few extra minutes to the baking time.
