Description
Delicious and flaky gluten-free spanakopita parcels filled with spinach, feta cheese, and herbs. A perfect appetizer or light meal that’s both savory and satisfying.

- 250 g fresh spinach, washed and chopped
- 150 g feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 sheets gluten-free phyllo pastry (store-bought or homemade)
- 3 tablespoons melted butter or olive oil (for brushing)
Instructions
- Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Sauté the onion until translucent, then add the garlic and cook for another minute.
- Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
- In a bowl, combine the cooked spinach mixture, crumbled feta, dill, parsley, oregano, salt, and pepper.
- Place one sheet of gluten-free phyllo on a clean surface and brush lightly with melted butter or olive oil. Layer with a second sheet and brush again.
- Cut the layered sheets into 4 equal squares. Spoon the spinach filling onto each square.
- Fold each square into a parcel, sealing the edges by pressing gently.
- Place the parcels on the baking sheet and brush the tops with more melted butter or olive oil.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Allow to cool slightly before serving.
Notes
- If gluten-free phyllo sheets are unavailable, you can use gluten-free puff pastry as an alternative.
- For a vegan option, substitute feta with vegan cheese and use olive oil instead of butter.
- These parcels can be made ahead and frozen before baking. Bake from frozen, adding a few extra minutes to the baking time.
