Instructions
- Prepare the Brownies:
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or foil, sprayed with non-stick spray.
- In a bowl or stand mixer, combine melted butter, cocoa powder, sugar, eggs, salt, vanilla extract, and instant espresso (if using). Mix until well combined.
- Stir in flour and baking powder until just combined. Avoid over-mixing to keep the brownies fluffy. The batter will be thick.
- Pour the batter into the prepared pan and spread evenly. Bake for 25-28 minutes, or until a toothpick inserted into the center comes out clean. Allow the brownies to cool for 15 minutes.
- Prepare the frosting by beating together the frosting ingredients until smooth. Spread the frosting over the brownies once they have cooled completely.
- Option 1: Easy Ghost Brownies
- Melt white chocolate chips and spoon a small circle onto parchment paper. Use the back of a spoon to shape the circle into a ghost.
- Freeze the ghost shapes for 15-20 minutes to set.
- Once set, use black frosting to create eyes and a mouth on each ghost.
- Place the ghost shapes on top of the frosted brownies.
- Option 2: Easy Mummy Brownies
- Melt white chocolate chips and place them in a ziplock bag. Cut a small tip off the corner of the bag.
- Drizzle the melted white chocolate over the brownies in a back-and-forth pattern to create a mummy wrap effect.
- While the chocolate is still wet, place eyeball sprinkles on each brownie.
