For the Brownies:

  • 1 cup salted butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 1/2 tsp baking powder

  • 4 tsp vanilla extract
  • 1/2 tsp instant espresso (optional, for added depth of flavor)

For the Chocolate Frosting:

  • 1/4 cup salted butter, room temperature
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1 pinch of salt
  • 3 cups powdered sugar

For Decoration:

  • White chocolate chips
  • Ziplock bag
  • Eyeball sprinkles
  • Black frosting

Instructions

  • Prepare the Brownies:
    • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or foil, sprayed with non-stick spray.
    • In a bowl or stand mixer, combine melted butter, cocoa powder, sugar, eggs, salt, vanilla extract, and instant espresso (if using). Mix until well combined.
    • Stir in flour and baking powder until just combined. Avoid over-mixing to keep the brownies fluffy. The batter will be thick.
    • Pour the batter into the prepared pan and spread evenly. Bake for 25-28 minutes, or until a toothpick inserted into the center comes out clean. Allow the brownies to cool for 15 minutes.
    • Prepare the frosting by beating together the frosting ingredients until smooth. Spread the frosting over the brownies once they have cooled completely.
  • Option 1: Easy Ghost Brownies
    • Melt white chocolate chips and spoon a small circle onto parchment paper. Use the back of a spoon to shape the circle into a ghost.
    • Freeze the ghost shapes for 15-20 minutes to set.
    • Once set, use black frosting to create eyes and a mouth on each ghost.
    • Place the ghost shapes on top of the frosted brownies.
  • Option 2: Easy Mummy Brownies
    • Melt white chocolate chips and place them in a ziplock bag. Cut a small tip off the corner of the bag.
    • Drizzle the melted white chocolate over the brownies in a back-and-forth pattern to create a mummy wrap effect.
    • While the chocolate is still wet, place eyeball sprinkles on each brownie.
