These delicious mini meatloaves are a quick and easy twist on traditional Italian meatloaf. Perfectly seasoned and topped with a tangy glaze, they make a satisfying meal for the whole family.

- For the Meatloaf:
- 1 pound ground beef (80/20)
- 2/3 cup Italian-style bread crumbs
- 1/2 cup marinara sauce
- 1/3 cup shredded parmesan cheese
- 1 large egg
- 1 teaspoon freshly chopped parsley (plus extra for garnish)
- For the Glaze:
- 1/2 cup ketchup
- 1/4 cup BBQ sauce
- 1/2 tablespoon sugar
- 1/2 teaspoon white vinegar
Instructions
- Preheat the oven to 375°F (190°C). Line a sheet tray with foil and spray it lightly with cooking spray; set aside.
- In a large bowl, combine the ground beef, Italian breadcrumbs, marinara sauce, parmesan cheese, parsley, and egg. (Using clean hands works best for mixing.)
- Form the meat mixture into 4 round loaves and flatten each loaf slightly.
- Place the loaves on the prepared baking sheet and bake for 25 minutes or until the internal temperature reaches at least 165°F (74°C). Use a meat thermometer to check.
- While the mini meatloaves are baking, mix all the glaze ingredients in a small bowl.
- Once the meatloaves are done, remove them from the oven and spoon 1-2 tablespoons of sauce on top of each mini meatloaf. Bake for an additional 5-7 minutes.
- Garnish the finished meatloaves with freshly chopped parsley if desired, and serve immediately.
Notes
- Ensure the ground beef is at least 80% lean for the best flavor and texture.
- You can substitute turkey or chicken for a lighter option.
