Description

These Easy Jello Meringue Cookies are light, crispy, and bursting with fruity flavor! Made with Jello mix, they’re a fun twist on traditional meringue cookies. Perfect for a colorful treat or party snack!


Ingredients

  • 2 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 tablespoon flavored gelatin (such as Jello in your favorite flavor)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large, clean mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
  • Add the cream of tartar and continue beating until stiff peaks form.
  • Gradually add the granulated sugar, one tablespoon at a time, beating well after each addition until the meringue is glossy and stiff.
  • Gently fold in the flavored gelatin, vanilla extract, and salt. Mix until the meringue is well combined and the color is evenly distributed.
  • Using a spoon or a piping bag, drop spoonfuls or pipe small mounds of meringue onto the prepared baking sheet.
  • Bake for 1 1/2 to 2 hours, or until the meringues are dry to the touch and easily lift off the parchment paper.
  • Turn off the oven and let the meringues cool completely inside the oven with the door slightly ajar. This helps them dry out and become crisp.
  • Once cooled, serve and enjoy!

Notes

  • You can use any flavor of Jello to customize the cookies to your taste. Popular choices include strawberry, lemon, or lime for a burst of fruity flavor!
  • Make sure there is no trace of egg yolk in the egg whites, as this will prevent them from whipping up properly.
