Description

Easy King Ranch Chicken Casserole is a comforting, Tex-Mex-inspired dish layered with shredded chicken, tortillas, cheese, and a creamy, flavorful sauce. Itโ€™s a one-pan meal thatโ€™s perfect for family dinners and potlucks.


Ingredients

  • 3 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel), undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese
  • 10 small corn tortillas, torn into pieces
  • 2 tablespoons vegetable oil (for sautรฉing)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9ร—13-inch casserole dish.
  2. In a skillet, heat the oil over medium heat and sautรฉ the diced onion until translucent, about 4โ€“5 minutes.
  3. In a large bowl, combine the sautรฉed onion, cream of chicken soup, cream of mushroom soup, diced tomatoes with chilies, chili powder, cumin, and garlic powder. Mix well.
  4. Add the shredded chicken and stir to coat evenly.
  5. Layer half of the torn tortillas in the bottom of the prepared casserole dish. Top with half of the chicken mixture and 1 cup of shredded cheese. Repeat layers with remaining tortillas, chicken mixture, and cheese.
  6. Cover with foil and bake for 25 minutes. Then remove foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
  7. Let rest for 5 minutes before serving. Garnish with chopped cilantro or green onions if desired.

Notes

  • You can use rotisserie chicken to save time.
  • Substitute flour tortillas if you prefer a softer texture.
  • This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking.
