- 3 cups cooked, shredded chicken
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel), undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 small onion, diced
- 2 cups shredded cheddar cheese
- 10 small corn tortillas, torn into pieces
- 2 tablespoons vegetable oil (for sautรฉing)
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Grease a 9ร13-inch casserole dish.
- In a skillet, heat the oil over medium heat and sautรฉ the diced onion until translucent, about 4โ5 minutes.
- In a large bowl, combine the sautรฉed onion, cream of chicken soup, cream of mushroom soup, diced tomatoes with chilies, chili powder, cumin, and garlic powder. Mix well.
- Add the shredded chicken and stir to coat evenly.
- Layer half of the torn tortillas in the bottom of the prepared casserole dish. Top with half of the chicken mixture and 1 cup of shredded cheese. Repeat layers with remaining tortillas, chicken mixture, and cheese.
- Cover with foil and bake for 25 minutes. Then remove foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
- Let rest for 5 minutes before serving. Garnish with chopped cilantro or green onions if desired.
Notes
- You can use rotisserie chicken to save time.
- Substitute flour tortillas if you prefer a softer texture.
- This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking.
