Description

This Easy Meatloaf is a classic comfort food that’s both simple and delicious! Packed with savory flavor and topped with a sweet and tangy glaze, it’s perfect for a family dinner or meal prep.


Ingredients

Scale
  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 2 tbsp ketchup (plus extra for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste

For the Glaze:

  • 2 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tbsp Dijon mustard (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, egg, ketchup, Worcestershire sauce, garlic powder, thyme, salt, and pepper. Mix until just combined—don’t overwork the meat.
  3. Transfer the meat mixture into a lightly greased 9×5-inch loaf pan or shape it into a loaf on a lined baking sheet.
  4. In a small bowl, mix together the glaze ingredients: ketchup, brown sugar, and Dijon mustard (if using).
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
  7. Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides.

Notes

  • For extra moisture, you can add 1/4 cup grated zucchini or carrots to the meat mixture.
  • You can swap the breadcrumbs for oats for a healthier version.
  • If you prefer a crispier crust, bake the meatloaf on a rack set inside a baking sheet.
