Combining creamy peanut butter, sweet butterscotch chips, and crunchy chow mein noodles, this recipe is a family favorite. Originally created as a holiday treat, these haystacks are now enjoyed year-round. They’re quick to make, require no baking, and can be customized with optional roasted peanuts for added texture and flavor

  • 1 cup smooth peanut butter
  • 11 oz butterscotch chips
  • 4 cups chow mein noodles
  • 1 cup roasted peanuts (optional)

Instructions

  • Melt the Peanut Butter and Butterscotch Chips:
    In a microwave-safe bowl, combine the peanut butter and butterscotch chips. Microwave the mixture in 20-30 second intervals, stirring in between, until smooth and melted.
  • Mix in the Noodles and Peanuts:
    Once the peanut butter and butterscotch are melted, gently fold in the chow mein noodles and roasted peanuts (if using) until everything is evenly coated.
  • Form the Haystacks:
    Scoop spoonfuls of the mixture onto a sheet of wax paper, shaping them into clusters. Allow them to cool and set at room temperature for about 30 minutes to 1 hour.
