Ingredients

For the Chocolate Topping:

1/2 cup chocolate chips (semi-sweet or milk chocolate)

Prepare the Oat Mixture:
In a medium bowl, combine peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth and well-combined.
Add the rolled oats and mix until all oats are coated. -
Form the Cups:
Line a muffin tin with cupcake liners.
Divide the oat mixture evenly among the muffin cups (about 1-2 tablespoons per cup) and press down gently to compact the mixture into the bottom.
Place the muffin tin in the fridge to chill for about 10-15 minutes to firm up. -
Make the Chocolate Topping:
In a small microwave-safe bowl, melt the chocolate chips and coconut oil together in 20-30 second intervals, stirring in between until completely smooth. -
Top the Oat Cups:
Once the oat cups have firmed up, remove them from the fridge. Spoon the melted chocolate over each oat cup, spreading it out evenly with the back of a spoon. -
Chill and Set:
Return the muffin tin to the fridge and let the cups chill for at least 30 minutes, or until the chocolate topping has hardened and the oat cups are fully set. -
Serve and Enjoy:
Once set, remove the oat cups from the muffin tin and enjoy! These can be stored in the fridge for up to a week.
