- 8 oz pasta (spaghetti, penne, or any pasta of your choice)
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 1/2 cups broccoli florets
- 3 cups chicken or vegetable broth
- 1/2 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- Crushed red pepper flakes (optional, for a little heat)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- In a large pot, heat olive oil and butter over medium heat until the butter is melted.
- Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the pasta to the pot and stir to coat it in the garlic butter.
- Pour in the chicken or vegetable broth and bring the mixture to a simmer.
- Add the broccoli florets to the pot, and continue simmering for 10-12 minutes, or until the pasta is al dente and the broccoli is tender, stirring occasionally.
- If the pasta has absorbed most of the liquid and is almost done, add a little more broth or water to prevent it from sticking to the pot.
- Once the pasta is cooked, stir in the grated Parmesan cheese (if using), salt, pepper, and crushed red pepper flakes (if desired).
- Remove from heat and stir to combine everything until the sauce thickens and becomes creamy.
- Garnish with fresh parsley and serve hot!
Notes
- For a richer flavor, you can add a splash of heavy cream or a dollop of cream cheese when stirring in the Parmesan.
- You can also add cooked chicken, shrimp, or bacon for extra protein if desired.
- To make this recipe dairy-free, simply omit the butter and Parmesan cheese and use a dairy-free alternative.
