Description

  • 8 oz pasta (spaghetti, penne, or any pasta of your choice)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 1/2 cups broccoli florets
  • 3 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional, for a little heat)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. In a large pot, heat olive oil and butter over medium heat until the butter is melted.
  2. Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Add the pasta to the pot and stir to coat it in the garlic butter.
  4. Pour in the chicken or vegetable broth and bring the mixture to a simmer.
  5. Add the broccoli florets to the pot, and continue simmering for 10-12 minutes, or until the pasta is al dente and the broccoli is tender, stirring occasionally.
  6. If the pasta has absorbed most of the liquid and is almost done, add a little more broth or water to prevent it from sticking to the pot.
  7. Once the pasta is cooked, stir in the grated Parmesan cheese (if using), salt, pepper, and crushed red pepper flakes (if desired).
  8. Remove from heat and stir to combine everything until the sauce thickens and becomes creamy.
  9. Garnish with fresh parsley and serve hot!

Notes

  • For a richer flavor, you can add a splash of heavy cream or a dollop of cream cheese when stirring in the Parmesan.
  • You can also add cooked chicken, shrimp, or bacon for extra protein if desired.
  • To make this recipe dairy-free, simply omit the butter and Parmesan cheese and use a dairy-free alternative.
