For the Filling:

  • ¼ cup sugar
  • 2 tbsp ground cinnamon
  • 2 tbsp unsalted butter, softened

For the Coffee Glaze:

  • 1 tbsp instant coffee (or espresso powder)
  • 2 tbsp hot water
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • 1 tbsp milk (or more to reach desired consistency)

Instructions

  1. Prepare the Dough:
    • In a large mixing bowl, combine the warm milk, sugar, and yeast. Stir gently and let it sit for 5-10 minutes until the yeast becomes foamy.
    • Add the melted butter, egg, flour, and salt into the yeast mixture. Stir until a dough forms.
    • Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook for this step.
    • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise for about 1 hour or until doubled in size.
  2. Prepare the Filling:
    • While the dough is rising, mix the sugar and cinnamon in a small bowl. Set aside.
  3. Roll and Shape the Papparotti:
    • Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle, about 12×8 inches.
    • Spread the softened butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top.
    • Starting from one edge, tightly roll the dough into a log, then cut the roll into 6-8 equal pieces.
    • Place the rolls in a greased 9×9-inch baking dish or on a lined baking sheet, leaving a little space between them.
  4. Bake the Papparotti:
    • Preheat the oven to 350°F (175°C).
    • Cover the rolls with a kitchen towel and let them rise for an additional 20-30 minutes.
    • Bake for 20-25 minutes, or until the rolls are golden brown.
  5. Prepare the Coffee Glaze:
    • While the rolls are baking, combine the instant coffee with hot water and stir until dissolved.
    • In a bowl, whisk together the coffee mixture, powdered sugar, vanilla extract, and milk. Add more milk if the glaze is too thick.
  6. Glaze and Serve:
    • Once the papparotti rolls are done baking, remove them from the oven and let them cool slightly.
    • Drizzle the coffee glaze generously over the warm rolls.

  • You can make the dough ahead of time and let it rise overnight in the refrigerator for a more developed flavor.
