Ingredients
-
1 pound breakfast sausage (mild or spicy, depending on preference)
-
1/4 cup pepper jelly (store-bought or homemade)
-
1/2 cup shredded cheddar cheese (optional)
-
1/4 teaspoon garlic powder
-
1/4 teaspoon onion powder
-
1/4 teaspoon black pepper
-
1 package of mini biscuit dough (or homemade biscuit dough)
Instructions
1. Prepare the Sausage:
-
In a skillet over medium heat, cook the breakfast sausage, breaking it up into crumbles. Cook until browned and fully cooked through, about 6-8 minutes.
-
Drain any excess grease, and stir in garlic powder, onion powder, and black pepper for extra flavor.
2. Prepare the Biscuit Dough:
-
Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or line it with paper liners.
-
Roll out the mini biscuit dough and cut it into smaller rounds. Press each round of dough into the muffin cups to form the base for your bites.
3. Assemble the Breakfast Bites:
-
Spoon a small amount of the cooked sausage mixture (about 1 tablespoon) into each muffin cup, over the dough.
-
Top each with a small spoonful of pepper jelly (about 1 teaspoon) and, if desired, a sprinkle of shredded cheddar cheese.
4. Bake the Bites:
-
Place the muffin tin in the oven and bake for about 10-12 minutes or until the biscuit dough is golden brown and cooked through.
-
Once baked, remove the bites from the oven and allow them to cool slightly before serving.
5. Serve:
-
Serve these warm, either as a breakfast treat, appetizer, or snack. Enjoy
Notes
-
For added spice, use a hot pepper jelly or add a pinch of cayenne pepper to the sausage mixture.
-
You can make these ahead of time and store them in an airtight container for up to 3 days. Reheat in the oven or microwave before serving.
-
If you want a dairy-free version, simply skip the cheese or use a dairy-free cheese substitute.
