Description

For the Crust:

  • 2 cups graham cracker crumbs

For the Cheesecake Filling:

  • 1 (3.4 oz) package instant pistachio pudding mix
  • 1 cup milk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped

Instructions

  • Prepare the Crust:
    In a mixing bowl, combine graham cracker crumbs and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Set aside.
  • Make the Cheesecake Filling:
    In a large bowl, beat the softened cream cheese, pistachio pudding mix, milk, powdered sugar, and vanilla extract together until smooth and well combined.
  • Fold in the Whipped Cream:
    In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until it’s fully incorporated and the mixture is smooth and fluffy.
  • Assemble the Cheesecake:
    Pour the cheesecake mixture over the prepared graham cracker crust in the springform pan. Use a spatula to smooth the top evenly.
  • Chill the Cheesecake:
    Refrigerate the cheesecake for at least 4 hours or overnight to allow it to fully set. The longer it chills, the firmer and more flavorful it will become.
