Description

This Easy Pistachio Cheesecake combines the rich, creamy texture of traditional cheesecake with the delightful nutty flavor of pistachios. With a graham cracker crust and no-bake filling, this dessert is incredibly simple to prepare but looks and tastes like a gourmet treat. Itโ€™s perfect for family gatherings, special occasions, or any time youโ€™re craving a delicious and easy-to-make cheesecake.

Ingredients

Scale

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 (3.4 oz) package instant pistachio pudding mix
  • 1 cup milk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped

Instructions

  • Prepare the Crust:
In a mixing bowl, combine graham cracker crumbs and melted butter. Stir until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Set aside.
  • Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese, pistachio pudding mix, milk, powdered sugar, and vanilla extract together until smooth and well combined.
  • Fold in the Whipped Cream:
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until itโ€™s fully incorporated and the mixture is smooth and fluffy.
  • Assemble the Cheesecake:
Pour the cheesecake mixture over the prepared graham cracker crust in the springform pan. Use a spatula to smooth the top evenly.
  • Chill the Cheesecake:
Refrigerate the cheesecake for at least 4 hours or overnight to allow it to fully set. The longer it chills, the firmer and more flavorful it will become.

Notes

  • For extra flavor, garnish the cheesecake with chopped pistachios or a drizzle of chocolate or caramel sauce.
  • Make sure the cream cheese is softened before mixing to prevent lumps in the filling.
  • This cheesecake can be made the day before serving to give it time to fully set and develop more flavor.
