- 2 cups beef broth
- 1 cup sliced mushrooms
- 1 small onion, sliced
- ¼ cup all-purpose flour
- 2 tbsp tomato paste
- 1 tbsp Dijon mustard
- ½ tsp dried thyme
Instructions
- Prepare Meatballs: In a large bowl, mix together ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper until well combined. Shape into 1-inch meatballs.
- Brown Meatballs: Heat olive oil in a skillet over medium heat. Brown meatballs on all sides but do not cook through. Transfer meatballs to a slow cooker.
- Prepare Sauce: In the same skillet, sauté sliced onions and mushrooms until softened. Stir in flour and cook for 1 minute. Gradually add beef broth, stirring until the sauce thickens. Add tomato paste, Dijon mustard, and dried thyme. Pour sauce over meatballs in the slow cooker.
- Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until meatballs are cooked through and the sauce is thickened.
